i slept in today :] i love sleeping! anywho. i had major cravings for thai food. so i went on yelp to see where a good thai restaurant was around here. thai basil was the winner! i ordered chicken and tofu pad thai, yellow curry with chicken and brown rice and and a veggie spring roll. omg it was so amazing. i wanted to eat more but i was so stuffed! i also got thai iced tea which i know will kill my stomach later but its my favorite! [hello lactose intolerant]! i have a lot of left overs so this will be me yummy lunch again tomorrow!
i was pretty full from lunch and didn't eat a snack in between. instead i baked those red velvet cupcakes! i had a bite of the boyfriends. ill have to post pictures of them tomorrow. for dinner it was chicken stuffed with laughing cow cheese and topped with marinara sauce. for the sides we have some cut up strawberries and banana and steamed broccoli and cauliflower! i really need to start trying new veggies. the boyfriend just doesn't like anything but those two, oh and carrots.. lol he is such a stubborn eater.
so i have not been working out :\ no running or 30 day shred. i guess im just enjoying my spring break. lol. i think ill try and run tomorrow. i hate the feeling of being not being active. but im so lazy.. i need to get out of this funk lol

mmm breakfast was amazing. i had two banana waffles from trader joes. topped them of with some nutella and cut up strawberries and banana! i think its my favorite breakfast ever!
snack was whole wheat bread, some ham, and cut up gouda cheese. my cheese really didn't melt. i think instead of the toaster oven ill just stick it under the broiler.
i also had a cup of left over cheese stuffed tortellini and marinara sauce. again i spent the day in front of the tv watching NCIS and ellen. but i did go to target <3 favorite store ever. i saw some bedding that i may get when we move. i also hit up bed bath and beyond to pick up some mixing bowls and a sifter. either tonight or tomorrow night im going to bake some red velvet cupcakes!
for dinner we had chicken lettuce wraps. super easy:
- 2 cubed chicken breasts
- 1 teaspoons of olive oil or cooking spray
- water chestnuts
- snap peas [or/and any other veggies you want to add]
- 3 tablespoons of light soy sauce
- 3 tablespoons of light brown sugar
- 3/4 teaspoons of rice vinegar
- a head of lettuce
1. dissolve the brown sugar in the soy sauce and rice vinegar
2. cook chicken in olive oil or spray pan with cooking spray
3. mix in the water chestnuts and snap peas until heated
4. then stir in the sauce
i still don't know how places get such perfect lettuce cups. mine always tear or never come out right.. lol

i ate an odwalla banana nut bar. i was too hungry and forgot to take a picture :/ oops
first day of spring break. woohoo! i slept in until 11am. i had a late lunch since i woke up late. i hate around 3pm. i first had a bowl of chicken tortilla soup bought from safeway. i prefer my homemade soup. it tastes way better.
i also chomped on leftover bbq chicken pizza from last night. i only ended up eating 2 and giving the boyfriend the last slice.
i really didnt do anything all day. i kinda just bummed it on the sofa and watched NCIS and ellen.. lol i love doing nothing. as a snack i had a half of a whole wheat pita with some trader joes hummus. also i had some grapes. i ate half then froze the other half and snacked on them before dinner :] frozen grapes are amazingly good!

for lunch the boyfriend and headed to tempe marketplace. he was craving a chipotle burrito and i was craving a bacon lettuce and tomato plus mayo whole wheat sandwich from paradise bakery & cafe. it was sooo good!
i also bought 8 mini chocolate chip oatmeal cookies. i had 3 and the boy ate the rest. they were AMAZING!
after lunch we headed to ikea! favorite store ever! we were looking for some new stuff to add to our new apartment!
for dinner i baked a bbq chicken pizza. i had three pieces. it taste just like the one from california pizza kitchen.
bbq chicken pizza:
- 2 tablespoons of olive oil
- 1/2 lb diced chicken
- 2/3 cups of bbq sauce [bullseye original]
- 1 package of refrigerate pizza dough [whole wheat from trader joes!]
- 1 cup of mozzarella cheese
- 3/4 cup of shredded gouda cheese
- 3/4 cup of shredded parmesan cheese
- 1/2 medium red onion thinly sliced
- 3 tablespoons of chopped fresh cilantro
1. preheat oven to 400 degrees f.
2. in a large skillet of medium-high heat, heat oil, add the chicken and saute until golden brown [about 12 minutes] remove from heat into a bowl and toss chicken with 2 tablespoons of bbq sauce. set aside.
3. roll out pizza dough onto a greased cookie pan and shape dough to fit the pan. spread the remaining bbq sauce evenly over pizza dough. sprinkle cheese, onion and chicken over sauce.
4. bake about 20 minutes or until cheese bubbles, sprinkle with chopped cilantro.
so easy and comes out delicious!

oops i slept in until 11pm. i headed over to pool to watch the boyfriend finish up his last game he was refereeing. then we walked over to extreme pita. i got a whole wheat pita stuffed with grilled chicken, lettuce, green bell pepper, cucumber, lettuce, and tzatziki sauce. it was very filling.
i spent the rest of the day going through the whole apartment, throwing out junk that has piled up. we have a walk through on monday. they want to make sure were not crazy people who destroy apartments.
i worked up quite an appetite. i didn't feel like cooking dinner again tonight. so we headed to san felipes cantina. they have the most delicious salsa ever which had chunky tomatoes, black beans and corn! i ate like half the chips.. lol

breakfast: banana waffles from trader joes, with some nutella spread on top. along with a cut up banana and some strawberries. it was so good!!!
the boyfriend and i decided to go to a dodger spring training game. it took us an hour to find the stadium. it really only should have taken us 30 minutes! LOL but it was a beautiful day outside to watch some baseball :]
he wanted tacos, so i got tacos too. they ran out of pico de gallo and put cheese and sour cream on mine :\ it was really gross. i only ended up eating half of one and chucked the rest. $8 for dried out chicken tacos.
manny played! the dodgers won in the 9th. woohoo!!!
the boyfriend and i got a special invitation from our apartment complex to move into the lake tower suites! we signed the papers today and should be moving next weekend! were so excited. its twice as big as our current apartment. and instead of a loft its two stories! and its looks out onto tempe lake!
to celebrate we went to chillis bar & grill for dinner. i got the chicken fajita pita with the sauce on the side. it was yummy. but he forgot that i ordered broccoli instead of the fries. so i quickly scooped all the fries over to the boyfriends plate so i wouldn't be tempted.

now im going watch old i love lucy episode on dvd!!
